Cheesy baked cowboy dip is a warm and creamy dip made with ground beef, cream cheese, shredded cheese, Rotel tomatoes, and spices. It’s baked until bubbly and served hot as a delicious appetizer.

  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (10 ounces) Rotel tomatoes (diced tomatoes with green chilies)
  • 1/2 cup sour cream
  • 1/4 cup diced green onions (optional for garnish)
  • 1 tablespoon taco seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • Tortilla chips, crackers, or veggies for serving

Instructions

Step 1: Preheat the oven

  • Preheat your oven to 375°F (190°C).

Step 2: Cook the ground beef

  • In a skillet over medium heat, cook the ground beef until browned and fully cooked.
  • Drain excess fat and season with taco seasoning, garlic powder, smoked paprika, salt, and pepper.

Step 3: Mix the ingredients

  • In a large mixing bowl, combine the cooked beef, cream cheese, shredded cheeses, Rotel tomatoes, and sour cream.
  • Mix until all ingredients are evenly incorporated.

Step 4: Transfer to a baking dish

  • Spread the mixture evenly in a greased 9×9-inch baking dish or oven-safe skillet.

Step 5: Bake the dip

  • Bake in the preheated oven for 20-25 minutes, or until the dip is bubbly and the cheese is melted.

Step 6: Garnish and serve

  • Remove from the oven and let it cool slightly.
  • Garnish with diced green onions, if desired.
  • Serve warm with tortilla chips, crackers, or veggies.
