Chipotle Black Beans

Chipotle black beans are simmered black beans infused with cumin, garlic, oregano, bay leaf, and a hint of vinegar. Inspired by the popular Mexican grill’s side dish, they are savory, lightly spiced, and slightly tangy—perfect for complementing bold Tex-Mex flavors.

    • 2 (15 oz) cans black beans (undrained) or 3 cups cooked black beans with ½ cup reserved cooking liquid

    • 1 tablespoon olive oil

    • 3 garlic cloves, minced

    • ½ teaspoon ground cumin

    • ½ teaspoon dried oregano (preferably Mexican oregano)

    • 1 bay leaf

    • ½ teaspoon salt (or to taste)

    • ¼ teaspoon black pepper

    • 2 teaspoons red wine vinegar or apple cider vinegar

    • ½ cup water or vegetable broth (optional, to loosen if needed)

    • Optional: pinch of cayenne or chili flakes for heat

Instructions

Step 1: Sauté the Aromatics

Heat olive oil in a medium saucepan over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant but not browned. This builds the base flavor of the dish.

Step 2: Add Spices and Beans

Stir in cumin, oregano, and bay leaf. Let the spices bloom for 15–20 seconds, then pour in the black beans with their liquid. If using cooked beans, add a splash of cooking liquid or broth to maintain moisture.

Step 3: Simmer to Develop Flavor

Bring the mixture to a gentle simmer. Reduce the heat and cook uncovered for 10–15 minutes, stirring occasionally. If the beans become too thick, add a bit of water or broth to loosen them to your preferred consistency.

Step 4: Season and Finish

Add salt, pepper, and apple cider vinegar. Stir well and simmer for another 2–3 minutes. Taste and adjust seasoning as needed. Remove the bay leaf before serving.

Step 5: Serve Warm

Serve warm as a side dish or over rice, in tacos, burritos, or salads. These beans also refrigerate and reheat beautifully.
