Chipotle Pinto Beans are slow-simmered beans seasoned with cumin, garlic, bay leaf, oregano, and a touch of vinegar. Inspired by the side dish served at Chipotle Mexican Grill, they’re flavorful, slightly saucy, and pair well with a wide variety of Tex-Mex meals.
Heat olive oil in a saucepan over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Stir in cumin, oregano, and bay leaf to toast the spices and release their aroma.
Pour in the pinto beans with their liquid. If using home-cooked beans, include ½ cup of the cooking liquid or broth to help achieve a slightly saucy texture.
Bring the beans to a simmer. Add salt, pepper, and vinegar. Simmer uncovered for 12–15 minutes, stirring occasionally, until the beans are tender and the flavors have melded. Add water or broth as needed to maintain a slightly thick consistency.
Taste and adjust seasonings if needed. Remove the bay leaf and serve warm. These beans are delicious as a side or mixed into rice, tacos, or burrito bowls.
