Costco’s fruit cake is a dense and moist dessert loaded with dried fruits, nuts, and aromatic spices. Traditionally served during the holidays, this cake is rich in flavor and often enjoyed with coffee, tea, or a splash of brandy.

    • 2 cups mixed dried fruits (raisins, cranberries, chopped apricots, and cherries)

    • 1/2 cup chopped nuts (walnuts, pecans, or almonds)

    • 1/2 cup unsalted butter, softened

    • 3/4 cup granulated sugar

    • 3 large eggs

    • 1/4 cup orange juice

    • 1 teaspoon vanilla extract

    • 1 1/2 cups all-purpose flour

    • 1 teaspoon baking powder

    • 1/2 teaspoon ground cinnamon

    • 1/4 teaspoon ground nutmeg

    • 1/4 teaspoon salt

    • Optional: 2 tablespoons brandy or rum for soaking (plus extra for brushing)

Instructions

Step 1: Soak the dried fruits

    • Combine the mixed dried fruits with orange juice (and brandy or rum, if using) in a bowl.

    • Cover and let soak for at least 1 hour, or overnight for best results.

Step 2: Preheat the oven

    • Preheat your oven to 325°F (165°C). Grease and line a loaf pan or 8-inch round cake pan with parchment paper.

Step 3: Cream the butter and sugar

    • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Step 4: Add eggs and vanilla

    • Beat in the eggs one at a time, followed by the vanilla extract. Mix until well incorporated.

Step 5: Mix dry ingredients

    • In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.

Step 6: Combine wet and dry ingredients

    • Gradually add the dry ingredients to the wet mixture, mixing just until combined.

    • Fold in the soaked fruits (with any remaining liquid) and chopped nuts.

Step 7: Bake the cake

    • Pour the batter into the prepared pan and smooth the top.

    • Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

Step 8: Cool and brush with brandy

    • Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.

    • If desired, brush the warm cake with additional brandy or rum for added moisture and flavor.
