Ingredients

    • Russet or Yukon Gold potatoes: 4 large, peeled and thinly sliced

    • Unsalted butter: 3 tablespoons

    • All-purpose flour: 3 tablespoons

    • Milk: 2 cups (whole milk preferred)

    • Heavy cream: 1 cup

    • Cheddar cheese: 2 cups, shredded

    • Parmesan cheese: ½ cup, grated

    • Garlic powder: ½ teaspoon

    • Onion powder: ½ teaspoon

    • Salt: ½ teaspoon

    • Black pepper: ½ teaspoon

    • Fresh parsley: 2 tablespoons, chopped (optional, for garnish)

Instructions

Prepare the Potatoes

    1. Preheat your oven to 375°F (190°C).

    1. Peel and thinly slice the potatoes (about ⅛-inch thick). Use a mandoline for even slices if available.

Make the Cheese Sauce

    1. In a medium saucepan, melt the butter over medium heat.

    1. Add the flour and whisk constantly for 1-2 minutes to create a roux.

    1. Gradually pour in the milk and heavy cream, whisking to combine.

    1. Add garlic powder, onion powder, salt, and pepper. Simmer until the sauce thickens, about 5 minutes.

    1. Stir in the cheddar and Parmesan cheeses until melted and smooth.

Assemble the Dish

    1. Grease a 9×13-inch baking dish with butter or non-stick spray.

    1. Arrange half of the potato slices in an even layer.

    1. Pour half of the cheese sauce over the potatoes, spreading evenly.

    1. Layer the remaining potato slices on top and cover with the remaining cheese sauce.

Bake the Potatoes

    1. Cover the dish with aluminum foil and bake for 45 minutes.

    1. Remove the foil and bake for an additional 20-25 minutes, or until the potatoes are tender and the top is golden brown.

    1. Let the dish rest for 10 minutes before serving.
