Crab Pad Thai is a variation of the traditional Thai noodle dish, featuring stir-fried rice noodles, a tangy tamarind-based sauce, and fresh crab meat. It’s garnished with peanuts, lime, and herbs for a burst of flavor and texture.

For the Sauce:

    • 3 tablespoons tamarind paste

    • 3 tablespoons fish sauce

    • 3 tablespoons brown sugar

    • 1 tablespoon soy sauce

    • 1 teaspoon chili powder (optional, for heat)

For the Noodles:

    • 8 ounces rice noodles

    • 2 tablespoons vegetable oil

    • 3 garlic cloves, minced

    • 2 large eggs, lightly beaten

    • 1 cup cooked crab meat

    • 1/2 cup bean sprouts

    • 1/4 cup chopped scallions

    • 1/4 cup crushed peanuts

    • 1 lime, cut into wedges

    • Fresh cilantro (optional, for garnish)

Instructions

Step 1: Prepare the noodles

    • Soak the rice noodles in warm water for 20-30 minutes or until soft. Drain and set aside.

Step 2: Make the sauce

    • In a small bowl, whisk together tamarind paste, fish sauce, brown sugar, soy sauce, and chili powder (if using). Adjust sweetness or tanginess to taste.

Step 3: Cook the aromatics and eggs

    • Heat vegetable oil in a large skillet or wok over medium heat. Add minced garlic and cook until fragrant, about 30 seconds.

    • Push the garlic to one side and pour the beaten eggs into the skillet. Scramble the eggs until just set.

Step 4: Stir-fry the noodles

    • Add the soaked noodles to the skillet and pour the prepared sauce over them. Toss to coat the noodles evenly.

Step 5: Add the crab and vegetables

    • Gently fold in the crab meat, bean sprouts, and scallions. Cook for 2-3 minutes until heated through.

Step 6: Serve

    • Transfer the Crab Pad Thai to serving plates. Top with crushed peanuts, fresh cilantro (if using), and lime wedges. Serve immediately.
