Henton’s Potato Salad is a creamy and tangy side dish made with boiled potatoes, mayonnaise, mustard, and a mix of vegetables like celery and onions. It’s a classic recipe known for its rich and flavorful dressing.

    • 2 pounds Yukon Gold or red potatoes, peeled and diced

    • 3 large eggs, hard-boiled and chopped

    • 1/2 cup mayonnaise

    • 2 tablespoons Dijon mustard

    • 1/4 cup sweet pickle relish

    • 1/4 cup finely chopped celery

    • 1/4 cup finely chopped onion

    • 1 tablespoon white vinegar

    • 1 teaspoon sugar

    • 1/2 teaspoon paprika

    • Salt and freshly ground black pepper, to taste

Instructions

Step 1: Cook the potatoes

    • Place the diced potatoes in a large pot and cover with cold water.

    • Add a pinch of salt and bring to a boil over medium heat.

    • Cook for 10-12 minutes or until the potatoes are fork-tender. Drain and let cool.

Step 2: Prepare the dressing

    • In a large mixing bowl, whisk together mayonnaise, Dijon mustard, sweet pickle relish, white vinegar, sugar, paprika, salt, and pepper.

    • Adjust seasoning to taste.

Step 3: Mix the salad

    • Add the cooled potatoes, chopped eggs, celery, and onion to the bowl with the dressing.

    • Gently toss until all ingredients are evenly coated.

Step 4: Chill the salad

    • Cover the bowl with plastic wrap and refrigerate for at least 1 hour to let the flavors meld.

Step 5: Serve

    • Garnish with a sprinkle of paprika or fresh herbs, if desired, and serve chilled.
