Kodiak banana pancakes are a healthier twist on classic pancakes, using Kodiak Cakes mix and bananas to create a fluffy, nutrient-dense breakfast option. They’re high in protein and fiber, making them a satisfying start to your day.

Ingredients

    • Kodiak Cakes mix: 1 cup

    • Ripe banana: 1 large, mashed

    • Egg: 1 large

    • Milk: ¾ cup (adjust for desired batter consistency)

    • Vanilla extract: 1 teaspoon

    • Cinnamon: ½ teaspoon (optional)

    • Butter or cooking spray: For greasing the pan

Instructions

Prepare the Batter

In a large mixing bowl, combine the mashed banana, egg, milk, and vanilla extract. Mix until well blended.

Add the Dry Ingredients

Gradually add the Kodiak Cakes mix and cinnamon (if using) to the wet mixture. Stir until just combined, being careful not to overmix. Adjust milk if the batter is too thick.

Heat the Pan

Grease a non-stick skillet or griddle with butter or cooking spray. Heat over medium heat until hot but not smoking.

Cook the Pancakes

Scoop ¼ cup of batter onto the skillet for each pancake. Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set. Flip and cook for an additional 1-2 minutes until golden brown.
