Longhorn French Onion Soup

Longhorn French Onion Soup is a flavorful soup made with caramelized onions simmered in a beef-based broth, topped with a crusty bread slice and melted cheese, then broiled to perfection.

  • 4 large yellow onions, thinly sliced
  • 4 cups beef broth
  • 2 cups chicken broth
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 tablespoon all-purpose flour
  • 1 teaspoon sugar
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • 6 slices of baguette, toasted
  • 2 cups shredded Gruyère cheese

Instructions

Step 1: Prepare the onions

  • Peel and thinly slice the onions into even pieces.
  • Heat butter and olive oil in a large pot over medium heat.

Step 2: Caramelize the onions

  • Add the sliced onions to the pot and sprinkle with sugar and a pinch of salt.
  • Cook for 25-30 minutes, stirring occasionally, until the onions are golden brown and caramelized.

Step 3: Add the flour

  • Sprinkle flour over the onions and stir well to coat.

Step 4: Simmer the soup

  • Add the beef broth, chicken broth, Worcestershire sauce, and thyme.
  • Bring to a boil, then reduce the heat and simmer for 20 minutes. Season with salt and pepper.

Step 5: Assemble and broil

  • Preheat your broiler and ladle the soup into oven-safe bowls.
  • Place a slice of toasted baguette on top of each bowl and generously sprinkle with Gruyère cheese.
  • Broil for 2-3 minutes or until the cheese is melted and bubbly.
