Mashed Potato Mac and Cheese is a hybrid dish that layers creamy mashed potatoes with cheesy macaroni, baked to golden perfection. It’s a hearty and satisfying side dish or main course that’s as comforting as it is delicious.

For the Mashed Potatoes:

    • 4 large russet potatoes, peeled and cubed

    • 1/4 cup unsalted butter

    • 1/2 cup milk or cream

    • Salt and pepper to taste

For the Macaroni and Cheese:

    • 2 cups elbow macaroni

    • 3 tablespoons unsalted butter

    • 3 tablespoons all-purpose flour

    • 2 cups milk

    • 2 cups shredded sharp cheddar cheese

    • 1/2 cup grated Parmesan cheese

    • 1/4 teaspoon garlic powder

    • 1/4 teaspoon smoked paprika (optional)

    • Salt and pepper to taste

Topping:

    • 1/2 cup breadcrumbs

    • 2 tablespoons melted butter

    • Optional: fresh parsley for garnish

Instructions

Step 1: Prepare the mashed potatoes

    • Boil the peeled and cubed potatoes in salted water until tender, about 15-20 minutes.

    • Drain and mash with butter, milk or cream, salt, and pepper until smooth. Set aside.

Step 2: Cook the macaroni

    • Bring a large pot of salted water to a boil and cook the elbow macaroni according to package instructions. Drain and set aside.

Step 3: Make the cheese sauce

    • In a saucepan, melt butter over medium heat. Whisk in the flour and cook for 1-2 minutes.

    • Gradually add the milk, whisking constantly until the mixture thickens.

    • Stir in cheddar cheese, Parmesan cheese, garlic powder, smoked paprika, salt, and pepper until the cheese is melted and the sauce is smooth.

Step 4: Combine the macaroni and cheese

    • Add the cooked macaroni to the cheese sauce and stir to coat evenly.

Step 5: Layer the dish

    • Preheat your oven to 375°F (190°C).

    • In a greased 9×13-inch baking dish, spread an even layer of mashed potatoes.

    • Top with the macaroni and cheese mixture.

Step 6: Add the topping

    • In a small bowl, mix breadcrumbs with melted butter. Sprinkle evenly over the top of the dish.

Step 7: Bake

    • Bake uncovered for 20-25 minutes, or until the top is golden brown and bubbly.

Step 8: Serve

    • Let the dish cool for a few minutes before serving. Garnish with fresh parsley if desired.
