Raspberry chipotle sauce is a sweet and spicy condiment made with fresh or frozen raspberries, chipotle peppers, vinegar, and sugar. It’s a popular addition to grilled meats, cheese boards, and various appetizers.

    • 2 cups fresh or frozen raspberries

    • 2 tablespoons olive oil

    • 1 small onion, finely chopped

    • 2 garlic cloves, minced

    • 2 chipotle peppers in adobo sauce, chopped

    • 1/4 cup apple cider vinegar

    • 1/4 cup brown sugar

    • 1/4 teaspoon smoked paprika

    • Salt and freshly ground black pepper, to taste

    • 1/4 cup water (optional, to adjust consistency)

Instructions

Step 1: Sauté the aromatics

    • Heat olive oil in a saucepan over medium heat.

    • Add chopped onion and garlic, and sauté until softened and fragrant, about 2-3 minutes.

Step 2: Add the raspberries and chipotle peppers

    • Stir in the raspberries and chopped chipotle peppers.

    • Cook for 3-4 minutes until the raspberries begin to break down.

Step 3: Incorporate the sweet and tangy elements

    • Add apple cider vinegar, brown sugar, and smoked paprika to the saucepan.

    • Stir well and simmer for 10-15 minutes, allowing the flavors to meld.

Step 4: Blend the sauce

    • Use an immersion blender or transfer the mixture to a blender and blend until smooth.

    • If needed, add water to adjust the consistency.

Step 5: Season and serve

    • Taste the sauce and season with salt and freshly ground black pepper.

    • Let it cool slightly before serving or storing.
