Trader Joe’s Ezekiel bread is a flourless, sprouted whole-grain bread made from a combination of wheat, barley, millet, spelt, soybeans, and lentils. The grains and legumes are sprouted before being ground into dough, making the bread more nutritious, easier to digest, and higher in protein than regular whole wheat bread.

For the Sprouted Grain & Legume Blend:

    • 2 ½ cups hard red wheat berries – The base of the bread, rich in fiber.

    • ½ cup barley – Adds chewiness and depth of flavor.

    • ½ cup millet – A naturally gluten-free grain that provides lightness.

    • ¼ cup lentils – Adds plant-based protein and nutrition.

    • ¼ cup soybeans – Enhances protein content.

    • ¼ cup spelt berries – An ancient grain that adds a nutty taste.

For the Dough:

    • 1 ½ cups warm water (110°F/45°C) – Helps activate the yeast.

    • 1 packet (2 ¼ teaspoons) active dry yeast – Allows the bread to rise.

    • 1 tablespoon honey or agave syrup – Lightly sweetens and feeds the yeast.

    • 1 teaspoon salt – Enhances flavor.

    • 1 tablespoon olive oil – Helps keep the bread moist.

Instructions

Step 1: Sprout the Grains and Legumes (24–48 Hours Before Baking)

    1. Place wheat berries, barley, millet, lentils, soybeans, and spelt berries in a large bowl.

    1. Cover with warm water and let soak for 12 hours.

    1. Drain and rinse, then transfer to a sprouting jar or damp cloth.

    1. Let sit at room temperature for 24–48 hours, rinsing every 12 hours, until tiny sprouts appear.

Step 2: Prepare the Dough

    1. In a blender or food processor, grind the sprouted grains into a coarse dough-like consistency.

    1. In a small bowl, mix warm water, yeast, and honey. Let sit for 5 minutes until foamy.

    1. In a large mixing bowl, combine the ground sprouted grains, yeast mixture, salt, and olive oil.

    1. Knead for 10 minutes until the dough is elastic but slightly sticky.

Step 3: Let the Dough Rise

    1. Place the dough in a lightly greased bowl and cover with a damp towel.

    1. Let rise in a warm place for 1–2 hours until doubled in size.

Step 4: Shape and Bake the Bread

    1. Preheat the oven to 350°F (175°C).

    1. Shape the dough into a loaf and place it in a greased 9×5-inch loaf pan.

    1. Cover and let rise again for 30 minutes.

    1. Bake for 45–50 minutes, until the top is golden brown and sounds hollow when tapped.

Step 5: Cool and Slice

    1. Let cool in the pan for 10 minutes, then transfer to a wire rack.

    1. Cool completely before slicing for best texture.
