Banana Bread Brownie Muffins

Banana Bread Brownie Muffins

Banana bread brownie muffins are a hybrid dessert where a banana bread base is swirled or layered with rich brownie batter, then baked into individual muffin servings. They combine the sweetness of ripe bananas with the chocolatey goodness of brownies.

Ingredients

    • For the banana bread layer:

    • Ripe bananas: 2, mashed

    • Sugar: ¼ cup

    • Egg: 1 large

    • Vegetable oil: ¼ cup

    • Vanilla extract: 1 teaspoon

    • All-purpose flour: ½ cup

    • Baking powder: ½ teaspoon

    • Salt: ¼ teaspoon

    • For the brownie layer:

    • Unsalted butter: ¼ cup, melted

    • Sugar: ½ cup

    • Cocoa powder: ¼ cup

    • Egg: 1 large

    • Vanilla extract: 1 teaspoon

    • All-purpose flour: ⅓ cup

    • Salt: ⅛ teaspoon

Instructions

Prepare the Banana Bread Batter

    1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

    1. In a mixing bowl, mash the bananas until smooth. Add sugar, egg, oil, and vanilla extract, and mix well.

    1. Stir in the flour, baking powder, and salt until just combined. Set aside.

Prepare the Brownie Batter

    1. In another bowl, whisk together melted butter, sugar, and cocoa powder until smooth.

    1. Add the egg and vanilla extract, mixing until fully incorporated.

    1. Fold in the flour and salt until the batter is thick and glossy.

Assemble the Muffins

    1. Spoon about 1 tablespoon of banana bread batter into each muffin liner.

    1. Add 1 tablespoon of brownie batter on top.

    1. Swirl the two batters together gently using a toothpick or skewer for a marbled effect.

Bake the Muffins

    1. Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

    1. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
