For the Shrimp:

    • 1 lb large shrimp (peeled and deveined) – The star of the dish.

    • ½ cup buttermilk – This helps the coating stick and tenderizes the shrimp.

    • 1 cup cornstarch (or all-purpose flour for a thicker coating) – This creates a light, crispy crust.

    • ½ teaspoon salt – Enhances flavor.

    • ½ teaspoon black pepper – Adds mild heat.

    • ½ teaspoon garlic powder – Brings extra flavor.

    • ½ teaspoon smoked paprika – This adds a mild smoky touch.

    • Vegetable oil (for frying) – For crispiness.

For the Bang Bang Sauce:

    • ½ cup mayonnaise – The creamy base of the sauce.

    • ¼ cup sweet chili sauce – This adds a sweet and tangy kick.

    • 1 tablespoon sriracha – Gives it a spicy kick.

    • 1 teaspoon honey (optional) – Balances the spice with a hint of sweetness.

    • 1 teaspoon lime juice – This adds freshness.

For Garnishing & Serving:

    • Chopped green onions – Add a fresh, mild onion flavor.

    • Sesame seeds – For a slight crunch.

    • Lettuce leaves – For serving.

Instructions

Step 1: Prepare the Sauce

    1. Mix mayonnaise, sweet chili sauce, sriracha, honey, and lime juice in a small bowl.

    1. Taste and adjust spiciness by adding more sriracha if needed.

    1. Set aside while preparing the shrimp.

Step 2: Coat the Shrimp

    1. Place shrimp in a bowl and pour buttermilk over them. Let sit for 5 minutes.

    1. In a separate bowl, mix the cornstarch, salt, pepper, garlic powder, and smoked paprika.

    1. Remove shrimp from buttermilk, shaking off excess, and coat each piece in the cornstarch mixture.

Step 3: Fry the Shrimp

    1. Heat about 2 inches of vegetable oil in a deep pan over medium-high heat (350°F/175°C).

    1. Fry shrimp in batches for 2–3 minutes per side until golden brown and crispy.

    1. Transfer to a paper towel-lined plate to remove excess oil.

Step 4: Toss the Shrimp in Sauce

    1. Once all the shrimp are fried, place them in a large bowl.

    1. Drizzle the Bang Bang sauce over the shrimp and toss gently to coat.

Step 5: Garnish and Serve

    1. Sprinkle with chopped green onions and sesame seeds.

    1. Serve on lettuce leaves, over rice, or in tacos.
