Coconut Snowball Truffles

Coconut Snowball Truffles are bite-sized, no-bake confections made with sweetened condensed milk, shredded coconut, and often a hint of vanilla or almond extract. Rolled into balls and coated in coconut, they resemble little snowballs.

    • 2 1/2 cups shredded sweetened coconut (plus extra for coating)

    • 1/2 cup sweetened condensed milk

    • 1 teaspoon vanilla extract (or almond extract for variation)

    • Pinch of salt

    • Optional: Melted white or dark chocolate for drizzling

Instructions

Step 1: Mix the ingredients

    • In a large mixing bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, and a pinch of salt.

    • Stir until the mixture is evenly combined and forms a sticky dough.

Step 2: Chill the mixture

    • Cover the bowl with plastic wrap and refrigerate for 30 minutes to firm up the mixture for easier handling.

Step 3: Shape the truffles

    • Using a tablespoon or small cookie scoop, scoop out portions of the mixture and roll them into small balls with your hands.

    • Roll each ball in additional shredded coconut to coat completely.

Step 4: Optional decoration

    • For a fancier touch, drizzle the truffles with melted white or dark chocolate.

Step 5: Chill and serve

    • Place the truffles on a baking sheet lined with parchment paper. Refrigerate for another 15-20 minutes until firm.

    • Serve chilled or at room temperature.
