Dry Ingredients:
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup old-fashioned rolled oats
Wet Ingredients:
1/2 cup unsalted butter, softened
1/2 cup peanut butter (creamy or chunky)
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
Add-ins:
1 cup semisweet chocolate chips
1/2 cup chopped peanuts (optional)
Instructions
Step 1: Preheat and prepare
Preheat your oven to 350°F (175°C).
Line two baking sheets with parchment paper or silicone mats.
Step 2: Mix the dry ingredients
In a medium bowl, whisk together flour, baking soda, baking powder, salt, and rolled oats. Set aside.
Step 3: Cream the butter and sugars
In a large bowl, beat the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
Add the egg and vanilla extract, mixing until well combined.
Step 4: Combine wet and dry ingredients
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
Step 5: Fold in the add-ins
Gently fold in the chocolate chips and chopped peanuts (if using) until evenly distributed.
Step 6: Scoop and bake
Use a cookie scoop or spoon to drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are lightly golden but the centers remain soft.
Step 7: Cool and serve
Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature.
