For the Chicken:

    • 4 boneless, skinless chicken breasts

    • 2 tablespoons olive oil

    • 1 teaspoon garlic powder

    • 1 teaspoon paprika

For the Caramelized Onions:

    • 2 large onions, thinly sliced

    • 2 tablespoons unsalted butter

    • 1 tablespoon olive oil

    • 1 teaspoon sugar

    • 1/4 teaspoon salt

For the Mushroom Sauce:

    • 2 tablespoons unsalted butter

    • 8 ounces mushrooms, sliced

    • 2 garlic cloves, minced

    • 1/2 cup chicken broth

    • 1/2 cup heavy cream

    • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

    • Salt and pepper to taste

Instructions

Step 1: Season and cook the chicken

    • Season the chicken breasts with garlic powder, paprika, salt, and pepper.

    • Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 5-7 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside.

Step 2: Caramelize the onions

    • In the same skillet, melt butter with olive oil over medium heat. Add the sliced onions, sugar, and salt. Cook, stirring occasionally, for 20-25 minutes until the onions are soft and golden brown. Remove and set aside.

Step 3: Cook the mushrooms

    • Melt butter in the skillet and add the sliced mushrooms. Sauté for 5-7 minutes until golden and tender. Add minced garlic and cook for 1 minute until fragrant.

Step 4: Make the sauce

    • Pour in the chicken broth and scrape the bottom of the skillet to deglaze. Add the heavy cream and thyme, stirring to combine. Simmer for 5 minutes until the sauce thickens slightly. Season with salt and pepper.

Step 5: Assemble and serve

    • Return the chicken to the skillet, spooning the mushroom sauce over the top. Add the caramelized onions as a final layer. Cook for 2-3 minutes to heat through.

Step 6: Serve

    • Serve the chicken with your choice of sides, such as mashed potatoes, rice, or a fresh salad.
