Ingredients

  • For the biscuits:

  • For the gravy:
  • Turkey sausage: 1 pound, ground
  • All-purpose flour: 3 tablespoons
  • Milk: 3 cups
  • Salt: ½ teaspoon
  • Black pepper: 1 teaspoon
  • Red pepper flakes: ¼ teaspoon (optional, for heat)

Instructions

Prepare the Biscuits

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, whisk together flour, baking powder, and salt.
  3. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  4. Gradually add milk and stir until the dough comes together. Do not overmix.
  5. Roll out the dough on a floured surface to about ½ inch thick and cut into circles using a biscuit cutter.
  6. Place the biscuits on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until golden brown.

Cook the Turkey Sausage

  1. Heat a large skillet over medium heat. Add the turkey sausage and cook, breaking it into crumbles, until fully browned.

Make the Gravy

  1. Sprinkle the cooked sausage with flour and stir until coated evenly. Cook for 1-2 minutes to remove the raw flour taste.
  2. Gradually pour in the milk, stirring constantly to prevent lumps.
  3. Add salt, black pepper, and red pepper flakes (if using). Simmer for 5-7 minutes, or until the gravy thickens. Taste and adjust seasoning if needed.

Assemble the Dish

  1. Split the warm biscuits in half and place them on a plate.
  2. Spoon the turkey sausage gravy generously over the biscuits.
  3. Serve immediately and enjoy this comforting classic.
