Ingredients
Elbow macaroni: 2 cups
Mayonnaise: 1 cup (preferably Best Foods or Hellmann’s)
Milk: ¼ cup
Apple cider vinegar: 1 tablespoon
Sugar: 1 teaspoon
Carrot: 1 medium, grated
Celery: 1 stalk, finely chopped
Salt and pepper: To taste
Instructions
Cook the Macaroni
Bring a large pot of salted water to a boil.
Add elbow macaroni and cook until tender, about 10-12 minutes.
Drain and rinse with cold water. Let cool completely.
Prepare the Dressing
In a large mixing bowl, combine mayonnaise, milk, apple cider vinegar, sugar, salt, and pepper. Whisk until smooth and creamy.
Mix the Salad
Add the cooked and cooled macaroni, grated carrot, and chopped celery to the dressing.
Stir until all the ingredients are evenly coated.
Chill and Serve
Cover the salad and refrigerate for at least 1 hour to let the flavors meld.
Serve cold as a side dish or part of a Hawaiian plate lunch.
